The first time I came to know about this place was last summer. Their FB page really caught my attention since I'm a self-confessed noodle addict. But it was only recently that I got to try what their food.
Honestly, I wasn't expecting much from this place because I thought their ramen might probably be just another so-called ramen shop but doesn't really live up to the distinction to be called as such. Little did I know that I would be in for a great surprise.
I ordered their Red Dragon Ramen (Special - 220 php) since I was really craving for ramen these days. I ordered an additional Tamago (15 php). I actually wanted to order an extra serving of noodles; good thing the waitress told me to check after I've been served the bowl. And she was right, I really thought the bowl wouldn't be that large but it was.
I first took a sip of their soup; it was heavenly. It was just the right amount of spice for me and it was so rich with the collagen that was produced through long hours of boiling pork bones and other ingredients. The mayu (black garlic oil) enhanced the flavor as well and the broth wasn't too salty. For me, it was a perfect balance of everything. I could say Bakugo Ramen is probably the first authentic Japanese ramen in Dumaguete... and I'm so happy because I wouldn't have to travel to the bigger cities just to have a bowl of delicious ramen. Here are other things that made me say Bakugo's ramen is really authentic Japanese ramen:
Egg: half-boiled... This is how egg in Japanese ramen should be; the yolk is gooey and runny
Chashu: tender; melts in your mouth... I'd say the chashu that I had is at par with the other ramen restaurants I've tried in Manila and Cebu.
If there is one thing that could improve, it would probably be the noodles. Although the noodles is made in-house and is fresh, I would've wanted the noodles to be firmer; but it may have been my mistake as well. I should've told the waitress to cook it extra firm.
I now consider Bakugo Ramen as a gem that I've discovered. If only they could serve ramen for lunch, I would really be able to visit them more often. Nevertheless, Bakugo Ramen is all worth it.
